SHINOBU means “Forbearance” in Japanese as it is how the distiller’s spirit should be when making quality whisky. Shinobu Whisky is handcrafted by the creative distiller, Mr Usami, by carefully selecting whisky from around the world which are first reserved in ex-sherry and ex-bourbon casks and then finishing them with precious Japanese Mizunara oak in Japan.
Koshi-No is initially matured in a duo of bourbon and sherry casks. It’s then transferred to Japanese Mizanura oak for a finishing period before bottling at 43% ABV. A wonderful combo of red fruit, citrus and wood influence.
Nose: Stewed stone fruit and red berries, with creamy oak and mint white chocolate.
Palate: Lemon curd and citrus peel lead into oak char, chai spices and floral oak.
Finish: Toasty oak and underripe red fruit linger.
